Turkey Bolognese

This Turkey Bolognese is a healthier twist on the classic Italian meat sauce. It’s packed with flavor, easy to make, and perfect for pasta or as a filling for lasagna.

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 1 pound ground turkey (preferably lean)
  • 1 can (14 oz) crushed tomatoes (or diced tomatoes)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper, to taste
  • 1/2 cup dry red wine (optional, can substitute with broth)
  • 1 cup chicken or vegetable broth
  • Fresh parsley or basil, for garnish
  • Grated Parmesan cheese, for serving

Instructions:

1. Heat the oil:

  • In a large skillet or saucepan, heat the olive oil over medium heat.

2. Sauté the vegetables:

  • Add the onion, carrot, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes. Add the garlic and cook for an additional 1 minute until fragrant.

3. Brown the turkey:

  • Increase the heat to medium-high and add the ground turkey. Break it up with a wooden spoon and cook until browned, about 5-6 minutes. Make sure to cook until the turkey is no longer pink.

4. Add the liquids:

  • Stir in the red wine (if using) and let it simmer for a couple of minutes to reduce slightly. Then add the crushed tomatoes, tomato paste, and broth.

5. Season the sauce:

  • Add the oregano, basil, red pepper flakes, salt, and pepper. Stir well to combine.

6. Simmer:

  • Bring the sauce to a gentle simmer. Reduce the heat to low and let it simmer for at least 20-30 minutes, stirring occasionally. The longer you let it simmer, the better the flavors will meld. If the sauce becomes too thick, add a bit more broth or water.

7. Serve:

  • Taste and adjust seasoning as needed. Serve the Turkey Bolognese over your favorite pasta, zucchini noodles, or use it as a filling for lasagna. Top with fresh parsley or basil and grated Parmesan cheese.
