Starbucks Pumpkin Scones Copycat Recipe
These homemade pumpkin scones are a perfect fall treat, just like the ones from Starbucks! They’re spiced with cinnamon, nutmeg, and cloves, and topped with a sweet glaze that adds the perfect touch of sweetness.
Ingredients:
For the Scones:
- 2 cups all-purpose flour
- 1/3 cup brown sugar
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup canned pumpkin puree
- 3 tablespoons heavy cream or milk
- 1 large egg
- 1 teaspoon vanilla extract
For the Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons milk or cream
- 1/2 teaspoon vanilla extract
For the Spiced Glaze:
- 1/2 cup powdered sugar
- 1 tablespoon milk or cream
- 1/4 teaspoon ground cinnamon
- Pinch of nutmeg, ginger, and cloves
Instructions:
1. Preheat the Oven:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Make the Scone Dough:
- In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
- Cut the cold butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- In another bowl, whisk together the pumpkin puree, heavy cream, egg, and vanilla extract.
3. Combine the Wet and Dry Ingredients:
- Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix.
4. Shape the Scones:
- On a floured surface, form the dough into a circle about 1 inch thick. Cut into 8 wedges and place them on the prepared baking sheet.
5. Bake:
- Bake for 12-15 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean. Let the scones cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
6. Make the Glaze:
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract for the base glaze. Drizzle over the cooled scones.
7. Make the Spiced Glaze:
- In another bowl, combine the powdered sugar, milk, cinnamon, nutmeg, ginger, and cloves. Drizzle this spiced glaze over the base glaze on each scone for extra flavor.
Tips:
- Storage: These scones can be stored in an airtight container for up to 3 days. You can also freeze them (unglazed) for up to 1 month.
- For a More Pumpkin Flavor: Add an extra tablespoon of pumpkin puree if you prefer a stronger pumpkin taste.
Enjoy your homemade Starbucks Pumpkin Scones with your favorite fall beverage!
