Smothered Pork Chops Recipe

Smothered Pork Chops are a comforting and flavorful dish where tender pork chops are seared and then “smothered” in a savory, creamy gravy. This dish is perfect for pairing with mashed potatoes, rice, or vegetables.

Ingredients:

  • 4 bone-in or boneless pork chops (about 1 inch thick)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (or vegetable oil)
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth (or pork broth)
  • 1/2 cup heavy cream (or milk for a lighter version)
  • 1 tablespoon flour (for thickening the gravy)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1/2 teaspoon paprika (optional)
  • 1 tablespoon Worcestershire sauce (optional, for depth of flavor)
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

1. Season the Pork Chops:

  • Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.

2. Sear the Pork Chops:

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the pork chops to the skillet and sear for about 4-5 minutes per side, until they are golden brown and slightly crispy. They don’t need to be cooked through at this point; just seared on the outside.
  • Remove the pork chops from the skillet and set them aside.

3. Make the Gravy:

  • In the same skillet, add the sliced onion and cook over medium heat until softened and golden brown, about 5 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Sprinkle the flour over the onions and garlic, stirring to create a roux (a thick paste).
  • Gradually pour in the chicken broth while stirring to combine, scraping up any browned bits from the bottom of the pan.
  • Stir in the heavy cream, thyme, paprika (if using), Worcestershire sauce, and adjust salt and pepper to taste. Bring the mixture to a simmer and cook for 3-4 minutes, until it thickens.

4. Smother the Pork Chops:

  • Return the seared pork chops to the skillet, spooning some of the gravy over the chops.
  • Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the pork chops are fully cooked through (internal temperature should reach 145°F/63°C) and the gravy is thick and creamy.

5. Serve:

  • Garnish the pork chops with fresh chopped parsley if desired.
