Smashed Potatoes Recipe
Smashed potatoes are a delightful and easy side dish that combines the crispiness of roasted potatoes with a creamy interior. They make a perfect accompaniment to any meal!
Ingredients:
- 2 pounds baby potatoes (or small Yukon Gold or red potatoes)
- 3 tablespoons olive oil
- 4 tablespoons unsalted butter, melted
- 3-4 cloves garlic, minced
- Salt and pepper, to taste
- Fresh herbs (like rosemary, thyme, or parsley), for garnish
- Optional toppings: sour cream, grated cheese, or bacon bits
Instructions:
- Preheat Oven:
- Preheat your oven to 450°F (230°C).
- Boil Potatoes:
- In a large pot, add the potatoes and cover them with cold water. Add a generous pinch of salt.
- Bring the water to a boil and cook the potatoes until they are tender when pierced with a fork (about 15-20 minutes).
- Drain and Dry:
- Drain the potatoes and let them sit for a few minutes to steam dry. This helps them get crispy when roasted.
- Smash the Potatoes:
- Line a baking sheet with parchment paper or lightly grease it.
- Transfer the potatoes to the baking sheet. Using the bottom of a glass or a potato masher, gently smash each potato until flattened but still intact.
- Season:
- In a small bowl, mix together the olive oil, melted butter, minced garlic, salt, and pepper.
- Drizzle this mixture over the smashed potatoes, ensuring they are well-coated.
- Roast:
- Bake in the preheated oven for about 20-25 minutes, or until the potatoes are golden brown and crispy.
- Garnish and Serve:
- Remove from the oven and garnish with fresh herbs. Serve warm, with optional toppings like sour cream, cheese, or bacon bits.
Tips:
- For extra flavor, consider adding Parmesan cheese or crushed red pepper flakes before roasting.
- Feel free to experiment with different herbs and spices according to your taste.
Enjoy your delicious smashed potatoes!
