Shrimp Scampi with Linguini

Ingredients:

For the Shrimp Scampi:

  • 1 lb large shrimp (peeled and deveined)
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes (optional, for a bit of spice)
  • 1/2 cup dry white wine (or chicken broth)
  • 1 tablespoon fresh lemon juice
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste

For the Linguini:

  • 12 oz linguini pasta
  • Salt (for pasta water)

Instructions:

1. Cook the Linguini:

  • Bring a large pot of salted water to a boil. Add the linguini and cook according to package directions until al dente, about 9-11 minutes.
  • Drain the pasta, reserving about 1/2 cup of pasta water. Set the pasta aside.

2. Prepare the Shrimp Scampi:

  • While the pasta is cooking, heat olive oil and butter in a large skillet over medium heat.
  • Add minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes, until the garlic becomes fragrant.
  • Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side until the shrimp turns pink and opaque. Remove the shrimp from the skillet and set aside.

3. Make the Sauce:

  • In the same skillet, add white wine (or chicken broth) and lemon juice. Stir, scraping up any bits of shrimp or garlic from the skillet.
  • Bring the mixture to a simmer and cook for 2-3 minutes to reduce slightly.

4. Combine Shrimp and Pasta:

  • Add the cooked linguini to the skillet with the sauce and toss to coat. If the sauce seems too thick, add a little reserved pasta water to loosen it up.
  • Return the shrimp to the skillet and toss everything together until well combined.

5. Garnish and Serve:

  • Stir in fresh parsley and season with salt and pepper to taste.
  • Serve immediately with an extra squeeze of lemon juice, if desired.
