Ingredients:

  • 1 medium spaghetti squash
  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons olive oil or butter
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth (or white wine)
  • 1 lemon, juiced and zested
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste

Instructions:

1. Prepare the Spaghetti Squash:

  • Preheat the oven to 400°F (200°C).
  • Slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the insides with olive oil, season with salt and pepper, and place the halves face-down on a baking sheet.
  • Roast for 35-40 minutes, or until the flesh is tender and easily shredded with a fork. Once done, use a fork to scrape the squash into noodle-like strands and set aside.

  • Remove the shrimp from the skillet and set aside.

3. Make the Scampi Sauce:

  • In the same skillet, add the chicken broth (or wine), lemon juice, and lemon zest, and bring to a simmer. Cook for 2-3 minutes to let the sauce reduce slightly.
  • Stir in the remaining 1 tablespoon of olive oil or butter to add richness to the sauce.

4. Combine and Serve:

  • Add the cooked spaghetti squash strands to the skillet, tossing them in the scampi sauce until well-coated.
  • Return the shrimp to the skillet and toss everything together. Adjust seasoning with more salt, pepper, and lemon juice if needed.
  • Garnish with fresh parsley and Parmesan cheese (if desired) before serving.
