Ingredients

  • For the Meatloaf:
    • 1 lb (450g) raw shrimp, peeled and deveined

    • 1 teaspoon dried oregano
    • 1 teaspoon dried thyme
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 tablespoon fresh parsley, chopped (optional)

    • 1/2 cup ketchup
    • 2 tablespoons brown sugar
    • 1 tablespoon Dijon mustard
    • 1 teaspoon Worcestershire sauce

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
  2. Prepare the Shrimp:
    • In a food processor, pulse the raw shrimp until finely chopped, but not puréed. You want a mixture that still has some texture.
  3. Mix the Meatloaf Ingredients:
    • In a large mixing bowl, combine the chopped shrimp, ground meat, breadcrumbs, Parmesan cheese, chopped onion, bell pepper, minced garlic, eggs, Worcestershire sauce, dried oregano, dried thyme, salt, pepper, and parsley (if using). Mix until just combined; be careful not to overmix, as this can make the meatloaf dense.
  4. Shape the Meatloaf:
    • Transfer the mixture to the prepared loaf pan and shape it into a loaf.
  5. Prepare the Glaze:
    • In a small bowl, mix together the ketchup, brown sugar, Dijon mustard, and Worcestershire sauce. Spread half of the glaze over the top of the meatloaf.
  6. Bake the Meatloaf:
    • Bake in the preheated oven for about 50-60 minutes or until the internal temperature reaches 160°F (70°C). If the top starts to brown too quickly, you can cover it loosely with aluminum foil.

    • During the last 10-15 minutes of baking, brush the remaining glaze over the meatloaf.

    • Once done, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This allows the juices to redistribute.
