Salmon Croquettes

Salmon croquettes are crispy and flavorful patties made from a mixture of canned salmon, breadcrumbs, vegetables (like onions and bell peppers), seasonings (such as garlic, mustard, and lemon juice), and eggs. Ingredients:

  • 1 can (14-16 ounces) of salmon, drained and bones removed

Instructions:

  1. Prepare the Mixture:

    • In a large bowl, flake the drained salmon using a fork.

    • Add breadcrumbs, chopped onion, chopped bell pepper, minced garlic, Dijon mustard, lemon juice, beaten egg, salt, and pepper. Mix well until all ingredients are evenly combined.

  2. Shape the Croquettes:

    • Divide the mixture into equal portions and shape each portion into patties or croquettes (about 2-3 inches in diameter and 1/2 inch thick). You should get around 6-8 croquettes depending on size.

  3. Cooking:

    • Heat vegetable oil in a large skillet over medium heat.

    • Carefully place the salmon croquettes in the skillet and cook for about 3-4 minutes on each side, or until they are golden brown and crispy.

    • Use a spatula to gently flip them halfway through cooking to ensure even browning.

  4. Serve:

    • Once cooked through and golden brown, remove the croquettes from the skillet and place them on a paper towel-lined plate to drain excess oil.

    • Serve hot as a main dish or appetizer, optionally with a side of salad, vegetables, or a dipping sauce of your choice.
