Raspberry Icebox Cake Recipe
This Raspberry Icebox Cake is a delightful no-bake dessert that’s perfect for summer gatherings. With layers of graham crackers, whipped cream, and fresh raspberries, it’s a refreshing treat that everyone will love!
Ingredients:
- 1 pint fresh raspberries (about 2 cups)
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package (14.4 oz) graham crackers
- 1/2 cup raspberry jam or preserves (optional)
- Fresh mint leaves (for garnish, optional)
Instructions:
- Prepare the Cream:
- In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Use an electric mixer to beat until soft peaks form. Be careful not to overbeat; you want a smooth, fluffy texture.
- Layer the Cake:
- In a 9×9 inch (or similar size) baking dish, spread a thin layer of the whipped cream mixture on the bottom.
- Place a layer of graham crackers on top, breaking them as needed to fit.
- Spread another layer of whipped cream over the graham crackers, then add a layer of fresh raspberries. If desired, you can also spread a thin layer of raspberry jam on this layer for extra sweetness.
- Repeat Layers:
- Continue layering with graham crackers, whipped cream, and raspberries until you run out of ingredients, finishing with a layer of whipped cream on top. You can reserve a few raspberries for garnish.
- Chill:
- Cover the dish with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight. This allows the graham crackers to soften and the flavors to meld.
- Serve:
- Once chilled, slice the icebox cake and serve with additional raspberries and mint leaves for garnish if desired.
Tips:
- Variations: You can substitute raspberries with other berries like strawberries, blueberries, or blackberries for a mixed berry version.
- Make Ahead: This cake can be made a day in advance, making it a great choice for parties or potlucks.
- Storage: Keep any leftovers covered in the refrigerator for up to 3 days.
Enjoy this refreshing and easy Raspberry Icebox Cake!
