Pork Potstickers Recipe

These Pork Potstickers are a classic Asian appetizer with juicy, flavorful pork filling wrapped in tender dumpling wrappers and crisped to perfection on one side. Serve them with a tangy dipping sauce for an irresistible bite!

Ingredients:

For the Filling:

  • 1 lb (450g) ground pork
  • 2 green onions, finely chopped
  • 1 tablespoon fresh ginger, minced
  • 3 garlic cloves, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce (optional for sweetness)
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper (or black pepper)
  • 1 cup cabbage, finely shredded (optional)
  • 1 pack potsticker or gyoza wrappers (about 30-40 wrappers)

For Cooking:

  • 2 tablespoons vegetable oil
  • 1/3 cup water, for steaming

For the Dipping Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon chili oil or red pepper flakes (optional for spice)
  • 1 teaspoon sugar
  • 1 tablespoon green onion, finely sliced
  • 1 teaspoon sesame seeds

Instructions:

1. Prepare the Filling:

  • In a large bowl, combine the ground pork, green onions, ginger, garlic, soy sauce, sesame oil, rice vinegar, hoisin sauce (if using), sugar, white pepper, and cabbage (if using). Mix until all ingredients are thoroughly combined.

2. Assemble the Potstickers:

  • Lay a potsticker wrapper on a clean surface. Place 1 teaspoon of filling in the center of the wrapper.
  • Dip your finger in water and lightly moisten the edges of the wrapper.
  • Fold the wrapper in half over the filling to create a half-moon shape. Press the edges together and pleat one side to seal. Make sure there are no air bubbles trapped inside. Repeat with the remaining wrappers and filling.

3. Cook the Potstickers:

  • Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Once hot, arrange the potstickers flat-side down in the pan, making sure they don’t touch.
  • Fry for 2-3 minutes until the bottoms are golden and crispy.
  • Pour 1/3 cup of water into the pan and immediately cover with a lid to steam the potstickers. Cook for an additional 4-5 minutes until the water has evaporated and the pork is cooked through.
  • Remove the lid and let the potstickers cook for another 1-2 minutes to crisp up the bottoms again.

4. Make the Dipping Sauce:

  • In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, chili oil, sugar, green onion, and sesame seeds.

5. Serve:

  • Serve the potstickers warm with the dipping sauce on the side.

Tips:

  • Freezing Potstickers: You can freeze uncooked potstickers by placing them in a single layer on a tray, freezing until solid, and then transferring them to a freezer-safe bag. Cook them directly from frozen, adding a little extra steaming time.
  • Vegetarian Option: Substitute the pork with a mix of finely chopped vegetables like mushrooms, carrots, and tofu for a vegetarian version.
