Ingredients:

  • 1 ½ pounds ground beef (or a mix of beef and pork)

  • 1 cup pizza sauce (plus extra for topping)

  • 1 small onion, finely chopped

Instructions:

1. Preheat Oven:

  • Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.

2. Mix the Meatloaf:

  • In a large bowl, combine the ground beef, Italian-style breadcrumbs, egg, ½ cup of mozzarella cheese, Parmesan cheese, onion, garlic, Italian seasoning, salt, and pepper. Mix everything together gently until well combined.

3. Add Pizza Toppings:

  • Stir in the diced pepperoni and any other optional pizza toppings like olives or mushrooms.

4. Form the Meatloaf:

  • Shape the mixture into a loaf and place it in the prepared loaf pan or on the baking sheet. Flatten the top slightly to form an even surface.

5. Add Pizza Sauce:

  • Spread about ½ cup of pizza sauce over the top of the meatloaf, covering it evenly.

6. Bake:

  • Bake the meatloaf for 40-45 minutes, or until the internal temperature reaches 160°F (71°C).

7. Add Cheese Topping:

  • Remove the meatloaf from the oven and sprinkle the remaining ½ cup of mozzarella cheese on top. Drizzle a little more pizza sauce over the cheese if desired.

8. Bake Again:

  • Return the meatloaf to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

9. Serve:

  • Allow the meatloaf to rest for 5-10 minutes before slicing. Serve with extra pizza sauce on the side and a fresh salad or garlic bread.
