Pierogi Casserole Recipe

Ingredients:

  • 12 oz frozen or fresh pierogi (potato and cheese, sauerkraut, or your favorite filling)

  • 2 tbsp butter
  • 1 cup sour cream
  • 1 cup chicken or vegetable broth

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Sauté the Onions:
    • In a skillet over medium heat, melt the butter. Add the chopped onion and sauté until golden brown and caramelized, about 5-7 minutes. Remove from heat.
  3. Prepare the Casserole:
    • In a large mixing bowl, combine the sour cream, chicken or vegetable broth, garlic powder, onion powder, salt, and pepper. Mix well.
    • Layer half of the frozen or fresh pierogi in the bottom of a greased 9×13-inch baking dish. Top with half of the sautéed onions and half of the shredded cheese.
  4. Repeat the Layers:
    • Add the remaining pierogi on top, followed by the remaining onions and cheese.
  5. Add the Sauce:
    • Pour the sour cream mixture evenly over the top of the casserole, ensuring it covers the pierogi.
  6. Bake:
    • Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Let the casserole cool for a few minutes before serving. Garnish with chopped chives or green onions for a pop of color and flavor.
