Ingredients:

  • 1 lb boneless, skinless chicken breasts (or thighs)

  • 2 large carrots, sliced
  • 2 celery stalks, sliced

  • 8 oz egg noodles (or any noodle of choice)
  • Salt to taste
  • Fresh parsley or dill, chopped (optional for garnish)

Instructions:

  1. Cook the Chicken:
    • In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Season the chicken with a pinch of salt and pepper, then sear on both sides for 3-4 minutes until lightly browned. Remove from the pot and set aside.
  2. Sauté the Vegetables:
    • In the same pot, add another tablespoon of olive oil. Add the diced onion, garlic, carrots, and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables are softened.

  6. Taste and Adjust:
