- 1 pound (450g) bucatini or penne pasta
- 2 tablespoons olive oil
- 2 large eggs
- 1 cup grated Parmesan cheese (divided)

For the Meat Sauce:
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 pound (450g) ground beef or lamb
- 1 can (14 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1/2 cup red wine (optional)
- 1 teaspoon dried oregano
- 1 teaspoon ground cinnamon
- Salt and pepper, to taste
For the Béchamel Sauce:
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/4 teaspoon ground nutmeg
- 2 large eggs
- Salt, to taste
Instructions:
1. Prepare the Pasta:
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large bowl, mix the cooked pasta with olive oil, beaten eggs, half of the Parmesan cheese, and salt. Set aside.
2. Make the Meat Sauce:
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic; sauté until translucent.
- Add the ground beef or lamb and cook until browned.
- Stir in the diced tomatoes, tomato paste, red wine (if using), oregano, cinnamon, salt, and pepper. Simmer for about 15-20 minutes until the sauce thickens. Set aside.
3. Prepare the Béchamel Sauce:
- In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute until lightly golden.
- Gradually add the milk, whisking continuously to avoid lumps. Cook until the sauce thickens (about 5-7 minutes).
- Remove from heat and stir in the nutmeg, salt, and beaten eggs until well combined.
4. Assemble the Pastitsio:
- Preheat the oven to 350°F (175°C).
- In a greased baking dish, layer half of the pasta mixture evenly at the bottom.
- Spread the meat sauce on top of the pasta.
- Layer the remaining pasta over the meat sauce, then pour the béchamel sauce over the top. Spread evenly.
- Sprinkle the remaining Parmesan cheese on top.
5. Bake:
- Bake in the preheated oven for about 45 minutes to 1 hour, or until the top is golden brown and set.
