Our go-to Vegetarian Lasagne is a delicious and hearty dish that’s perfect for satisfying even the most discerning of tastes. This recipe layers tender lasagne sheets with a rich tomato sauce, vibrant vegetables, creamy ricotta cheese, and a generous topping of melted mozzarella and Parmesan. Whether you’re a vegetarian or simply craving a comforting meal, this lasagne delivers on flavor and texture. Here’s how to create this delightful dish:

Ingredients:

  • 9 lasagne sheets (oven-ready or par-cooked according to package instructions)
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese

For the Tomato Sauce:

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 carrot, grated
  • 1 zucchini, grated
  • 1 red bell pepper, diced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (6 oz) tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

For the Ricotta Mixture:

  • 2 cups ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup fresh basil, chopped (optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Tomato Sauce:
    • In a large saucepan, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
    • Add grated carrot, zucchini, and diced bell pepper. Cook for another 5 minutes until vegetables are tender.
    • Stir in crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally.
  2. Prepare the Ricotta Mixture:
    • In a mixing bowl, combine ricotta cheese, grated Parmesan cheese, egg, chopped basil (if using), salt, and pepper. Mix well until smooth.
  3. Assemble the Lasagne:
    • Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
    • Spread a thin layer of tomato sauce on the bottom of the baking dish.
    • Arrange 3 lasagne sheets over the sauce, overlapping slightly.
    • Spread a layer of ricotta mixture over the lasagne sheets, followed by a layer of tomato sauce. Sprinkle with mozzarella cheese and Parmesan cheese.
    • Repeat layers until all ingredients are used, ending with a layer of tomato sauce and cheese on top.
  4. Bake:
    • Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
    • Remove foil and bake for an additional 15 minutes or until cheese is bubbly and golden brown.
  5. Serve:
    • Let lasagne cool for a few minutes before slicing and serving. Garnish with fresh basil if desired.
