Our favourite spaghetti carbonara recipe

Spaghetti carbonara is a classic Italian pasta dish known for its creamy texture and rich flavor. It typically consists of pasta (usually spaghetti), eggs, cheese (often Pecorino Romano or Parmesan), pancetta or guanciale (cured pork cheek or jowl), and black pepper. Here’s a traditional recipe for spaghetti carbonara:

Spaghetti Carbonara Recipe:

Ingredients:

  • 12 ounces (340g) spaghetti
  • 4 ounces (115g) pancetta or guanciale, diced (you can also use bacon as a substitute)
  • 2 cloves garlic, minced (optional)
  • 2 large eggs
  • 1 cup grated Pecorino Romano or Parmesan cheese, plus extra for serving
  • Freshly ground black pepper
  • Salt to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.
  2. Cook the Pancetta (or Guanciale) and Garlic:
    • In a large skillet, cook the diced pancetta or guanciale over medium heat until it becomes crispy and golden brown, about 5-7 minutes. If using, add the minced garlic during the last minute of cooking and cook until fragrant (be careful not to burn it).
  3. Prepare the Egg Mixture:
    • In a mixing bowl, whisk together the eggs, grated cheese (reserve some for serving), and a generous amount of freshly ground black pepper.
  4. Combine the Pasta and Sauce:
    • Immediately after draining the pasta, add it to the skillet with the pancetta (or guanciale) and garlic. Toss to combine and evenly coat the pasta with the rendered fat.
  5. Add the Egg Mixture:
    • Remove the skillet from heat. Pour the egg and cheese mixture over the hot pasta, tossing quickly and continuously to coat the pasta evenly. The heat from the pasta will cook the eggs into a creamy sauce. If needed, add a little of the reserved pasta water to loosen the sauce.
  6. Serve:
    • Divide the pasta among serving plates or bowls.
    • Garnish with additional grated cheese, freshly ground black pepper, and chopped parsley if desired.
    • Serve immediately while hot.

Tips:

  • Eggs: Make sure the skillet is off the heat when you add the egg mixture to prevent the eggs from scrambling.
  • Cheese: Authentic carbonara uses Pecorino Romano, but Parmesan can also be used or a combination of both.
  • Pasta Water: The starchy pasta water helps to create a silky sauce, so don’t skip this step if your sauce needs a bit of loosening.
  • Variations: Some variations include adding a splash of white wine or using different types of pasta, though spaghetti is most traditional.
