This One Pot Mushroom Rice is a savory, comforting dish that’s easy to make and perfect as a side or a main course. The earthy flavor of mushrooms combined with fragrant garlic and herbs gives the rice a delicious, umami-rich taste.

Ingredients:

  • 1 cup long-grain rice (Basmati or Jasmine)
  • 1 1/2 cups vegetable or chicken broth (or water)
  • 1 lb mushrooms, sliced (cremini, button, or a mix)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • 1 tablespoon soy sauce
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

1. Sauté the Mushrooms:

  • Heat the olive oil or butter in a large skillet or pot over medium heat.
  • Add the sliced mushrooms and onion, and cook for about 5-7 minutes until the mushrooms release their moisture and begin to brown.
  • Stir in the garlic and cook for another 1-2 minutes until fragrant.

2. Add the Rice:
