One pot chicken risoni with crispy salami Recipe

Here’s a recipe for One-Pot Chicken Risoni with Crispy Salami—a flavorful dish where tender chicken and risoni (orzo) are cooked together with crispy salami for a rich and satisfying meal.

Ingredients:

  • 2 tablespoons olive oil
  • 200g salami, sliced into small pieces
  • 500g chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1½ cups risoni (orzo)
  • 3 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • ½ cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (optional)
  • Salt and pepper, to taste
  • Lemon wedges (for serving)

Instructions:

  1. Crisp the salami: Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the salami pieces and cook until they are crispy, about 3-4 minutes. Remove the salami from the pot and set aside on a paper towel to drain excess oil.
  2. Cook the chicken: In the same pot, add the remaining tablespoon of olive oil. Season the chicken with salt and pepper, then cook the chicken pieces until browned on all sides, about 6-8 minutes. Remove and set aside.
  3. Sauté the aromatics: Add the onion and garlic to the pot, cooking until softened, about 2-3 minutes.
  4. Cook the risoni: Stir in the risoni and toast for about 1 minute to enhance its flavor. Pour in the chicken broth, stir well, and bring the mixture to a boil. Lower the heat and let it simmer for 8-10 minutes, stirring occasionally, until the risoni is tender and most of the liquid has been absorbed.
  5. Combine everything: Add the cooked chicken, cherry tomatoes, and spinach to the pot. Stir to combine and allow the spinach to wilt, about 2 minutes.
