One-Pot Cheesy Mediterranean Chicken

Ingredients:

  • 4 boneless, skinless chicken thighs or breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach (fresh or frozen)
  • 1 cup cooked orzo or rice
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/4 cup crumbled feta cheese
  • Fresh basil or parsley, for garnish (optional)

Instructions:

  1. Season the Chicken:
    • In a bowl, mix the garlic powder, onion powder, oregano, thyme, salt, and pepper. Rub the spice mixture onto both sides of the chicken.
  2. Sear the Chicken:
    • In a large skillet or pot, heat the olive oil over medium heat. Add the chicken and sear for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
