Ingredients:

2 lbs ground chicken

¾ cup breadcrumbs (panko or Italian-style)

½ cup grated Parmesan cheese

2 large eggs

4 garlic cloves, minced

1 small onion, finely grated or minced

1 tsp Italian seasoning

½ tsp salt

½ tsp black pepper

2 tbsp chopped fresh parsley

2 tbsp olive oil

½ cup shredded mozzarella (for topping)

1 garlic clove, minced

Instructions:
1. Preheat Oven:

Set oven to 375°F (190°C). Line a baking sheet with parchment or lightly grease a loaf pan.
2. Mix the Meatloaf:

In a large bowl, combine ground chicken, breadcrumbs, Parmesan, eggs, minced garlic, onion, Italian seasoning, salt, pepper, parsley, and olive oil.

Gently mix until just combined (don’t overmix or it can get dense).
3. Shape & Bake:

Form mixture into a loaf shape on the baking sheet or press into a loaf pan.
