This Garlic Parmesan Chicken Meatloaf is a comforting twist on the classic, made with ground chicken for a lighter, tender bite. It’s loaded with fresh garlic, rich parmesan, Italian herbs, and baked to golden perfection with a savory, cheesy crust. Moist, juicy, and bursting with flavor, this melt-in-your-mouth meatloaf is perfect for an easy family dinner that feels indulgent but stays light.

Ingredients:

  • 2 lbs ground chicken

  • ¾ cup breadcrumbs (panko or Italian-style)

  • ½ cup grated Parmesan cheese

  • 2 large eggs

  • 4 garlic cloves, minced

  • 1 small onion, finely grated or minced

  • 1 tsp Italian seasoning

  • ½ tsp salt

  • ½ tsp black pepper

  • 2 tbsp chopped fresh parsley

  • 2 tbsp olive oil

  • ½ cup shredded mozzarella (for topping)

  • Extra Parmesan (for topping)

Optional glaze (light & savory):

  • 2 tbsp melted butter

  • 1 garlic clove, minced

  • 2 tbsp grated Parmesan

Instructions:

1. Preheat Oven:

  • Set oven to 375°F (190°C). Line a baking sheet with parchment or lightly grease a loaf pan.

2. Mix the Meatloaf:

  • In a large bowl, combine ground chicken, breadcrumbs, Parmesan, eggs, minced garlic, onion, Italian seasoning, salt, pepper, parsley, and olive oil.

  • Gently mix until just combined (don’t overmix or it can get dense).

3. Shape & Bake:

  • Form mixture into a loaf shape on the baking sheet or press into a loaf pan.

  • Bake for 35-40 minutes.

4. Garlic Parmesan Topping:

  • Mix melted butter, minced garlic, and Parmesan.

  • Brush over the meatloaf.

  • Sprinkle mozzarella and extra Parmesan on top.

  • Return to oven and bake for another 10-15 minutes, until cheese is melted, bubbly, and slightly golden.

5. Rest & Serve:

  • Let meatloaf rest for 5-10 minutes before slicing.

  • Garnish with fresh parsley.

  • Serve with mashed potatoes, roasted veggies, or a crisp salad.
