Marry Me Chicken Soup

The Marry Me Chicken Soup is a creamy, flavorful twist on the popular “Marry Me Chicken” recipe. It’s rich and comforting, with savory herbs, tender chicken, and a luscious broth that’s sure to win over anyone’s heart.

Ingredients:

  • 2 tablespoons olive oil
  • 1 pound (450g) chicken breasts or thighs, boneless and skinless
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Cook the Chicken:
    • Heat 1 tablespoon of olive oil in a large pot over medium heat.
    • Season the chicken with salt and pepper. Add the chicken to the pot and cook for 6-7 minutes per side, until browned and cooked through. Remove from the pot and set aside to cool slightly. Once cooled, shred the chicken into bite-sized pieces.
  2. Sauté the Aromatics:
    • In the same pot, add the remaining olive oil, diced onion, and minced garlic. Sauté for 3-4 minutes, until the onion is soft and translucent.
  3. Add the Herbs and Tomatoes:
    • Stir in the thyme, oregano, and red pepper flakes (if using), and cook for 1 minute until fragrant.
    • Add the chopped sun-dried tomatoes and cook for another minute.
  4. Simmer the Soup:
    • Pour in the chicken broth and bring the mixture to a simmer.
    • Add the shredded chicken back into the pot and let the soup simmer for about 10-15 minutes to allow the flavors to meld.
  5. Add Cream and Cheese:
    • Stir in the heavy cream and Parmesan cheese, and let the soup cook for another 5 minutes, stirring occasionally until the cheese is melted and the soup has thickened slightly.
  6. Taste and Adjust:
    • Season the soup with salt and pepper to taste. If you prefer a thicker soup, simmer it longer or add more Parmesan.
  7. Serve:
    • Ladle the soup into bowls and garnish with fresh basil or parsley if desired. Serve with crusty bread or over rice for a more filling meal.

Enjoy!

This Marry Me Chicken Soup is comforting, creamy, and bursting with flavor—perfect for impressing a loved one or enjoying on a cozy evening in.
