Ingredients:
- 1 lb (450g) beef stew meat, cut into bite-sized pieces
- 2 tablespoons vegetable oil

- 1-inch piece of ginger, minced
- 2 tomatoes, finely chopped
- 1 tablespoon tomato paste
- 1 can (14 oz / 400ml) coconut milk
- 1 cup beef broth or water
- 2 tablespoons Madras curry powder (adjust to taste)
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika (optional, for color)
- 1 teaspoon chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt and pepper to taste
- Fresh cilantro leaves, chopped (for garnish)
Instructions:
- Brown the Beef: Heat 1 tablespoon of vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef pieces in batches and brown them on all sides. Remove the beef from the pot and set it aside.
