London Broil is a method of cooking and a type of cut that typically refers to a lean cut of beef, such as flank steak or top round, which is marinated and then broiled or grilled. When making it in a slow cooker, the method changes to a long, slow braise which helps tenderize the meat and infuses it with flavor.
Here’s a simple recipe for making London Broil in a slow cooker:
Slow Cooker London Broil
Ingredients:
- 2-3 pounds of London Broil (flank steak or top round)
- 1 large onion, sliced
- 3-4 garlic cloves, minced
- 1 cup beef broth
- 1/2 cup soy sauce
- 1/4 cup Worcestershire sauce
- 1/4 cup balsamic vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons brown sugar
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons olive oil
Instructions:
- Marinate the Beef:
- In a large bowl or zip-lock bag, combine the beef broth, soy sauce, Worcestershire sauce, balsamic vinegar, Dijon mustard, brown sugar, thyme, rosemary, black pepper, and salt.
- Add the London Broil to the marinade, ensuring it’s fully coated. Marinate in the refrigerator for at least 4 hours or overnight for best results.
- Prepare the Slow Cooker:
- Heat olive oil in a large skillet over medium-high heat. Remove the beef from the marinade (reserve the marinade) and sear it in the skillet for about 2-3 minutes on each side, until browned.
- Cook the Beef:
- Place the sliced onions and minced garlic in the bottom of the slow cooker.
- Lay the seared London Broil on top of the onions and garlic.
- Pour the reserved marinade over the beef.
- Slow Cook:
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and easily shredded with a fork.
- Serve:
- Remove the beef from the slow cooker and let it rest for a few minutes before slicing or shredding.
- Serve with the cooked onions and some of the cooking liquid as a sauce.
