Loaded potato soup is a rich and creamy soup made with potatoes, often including additional toppings and mix-ins that mimic the flavors of a loaded baked potato. Here’s a basic recipe:
Loaded Potato Soup
Ingredients:
- 6 slices bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 large russet potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions:
- In a large pot, cook the bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving the bacon fat in the pot.
- Add the diced onion to the pot and sauté until softened, about 5 minutes. Add the garlic and cook for another minute.
- Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Use an immersion blender to blend the soup until smooth, or transfer to a blender in batches.
- Stir in the heavy cream, shredded cheddar cheese, and sour cream. Cook until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
- Serve hot, topped with crispy bacon, chopped green onions, and additional shredded cheese if desired.
