Lamb Koftas with Yoghurt Dressing

Ingredients:

For the Lamb Koftas:

  • 1 lb (450 g) ground lamb (or a mix of lamb and beef)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh mint, chopped (or 1 teaspoon dried)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika (or regular paprika)
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper, to taste
  • Olive oil, for grilling

For the Yoghurt Dressing:

  • 1 cup plain yogurt (Greek or regular)
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice (or to taste)
  • 1 garlic clove, minced
  • 1 tablespoon fresh mint or parsley, chopped
  • Salt and pepper, to taste

Instructions:

1. Prepare the Kofta Mixture:

  • In a large bowl, combine the ground lamb, chopped onion, minced garlic, parsley, mint, cumin, coriander, paprika, cinnamon, salt, and pepper. Mix well until all ingredients are evenly incorporated.

2. Shape the Koftas:

  • Divide the mixture into equal portions (about 12-14) and shape each portion into an oval or cylindrical shape around skewers (if using) or just as patties.

3. Cook the Koftas:

  • Preheat a grill or grill pan over medium-high heat. Lightly brush with olive oil.
  • Grill the koftas for about 8-10 minutes, turning occasionally, until they are cooked through and have nice grill marks. Alternatively, you can bake them in a preheated oven at 400°F (200°C) for about 15-20 minutes.

4. Make the Yoghurt Dressing:

  • While the koftas are cooking, prepare the yogurt dressing. In a bowl, combine the yogurt, olive oil, lemon juice, minced garlic, and chopped mint or parsley. Season with salt and pepper to taste. Mix well and adjust seasoning as desired.

5. Serve:

  • Serve the lamb koftas hot with the yogurt dressing drizzled over them or served on the side. They pair well with pita bread, salad, or rice.

Tips:

  • Serving Suggestions: These koftas are great served with a side of tabbouleh, roasted vegetables, or a simple green salad.
  • Make Ahead: You can prepare the kofta mixture ahead of time and refrigerate it until you’re ready to cook.
  • Freezing: Raw koftas can be frozen for later use. Just thaw them in the fridge before cooking.

Enjoy your delicious Lamb Koftas with Yoghurt Dressing! This dish is not only flavorful but also a great way to bring a taste of the Mediterranean to your table.
