Italian Sausage, Peppers, and Onions

Italian Sausage, Peppers, and Onions is a classic Italian-American dish typically made by sautéing Italian sausage links (sweet or spicy), along with sliced bell peppers (often green and red), and onions. The dish is usually seasoned with garlic, Italian herbs like oregano and basil, and sometimes a splash of red wine or vinegar for added flavor. It’s often served on its own, over pasta, or in a sandwich roll as a hearty and flavorful meal.

Ingredients:

  • 1 lb Italian sausage links (sweet or spicy, based on preference)
  • 2 bell peppers (1 green, 1 red or yellow), sliced into strips
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1/2 cup chicken broth or white wine (optional)
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Prep the Ingredients:
    • Slice the bell peppers into strips and thinly slice the onion.
    • Mince the garlic cloves.
  2. Cook the Sausage:
    • Heat a large skillet or frying pan over medium heat and add 1 tablespoon of olive oil.
    • Add the Italian sausage links to the pan and cook until browned on all sides and cooked through, about 8-10 minutes. Remove from the pan and set aside.
  3. Sauté the Vegetables:
    • In the same skillet, add the remaining tablespoon of olive oil if needed.
    • Add the sliced bell peppers and onions to the skillet. Cook, stirring occasionally, until they begin to soften and caramelize, about 5-7 minutes.
  4. Combine and Season:
    • Stir in the minced garlic, dried oregano, and dried basil. Cook for another 1-2 minutes until fragrant.
  5. Deglaze (Optional):
    • If using, pour in the chicken broth or white wine to deglaze the pan, scraping up any browned bits from the bottom.
  6. Simmer:
    • Return the cooked sausage links to the skillet with the vegetables. Reduce the heat to low and let everything simmer together for another 5-10 minutes to allow the flavors to meld. Season with salt and pepper to taste.
  7. Serve:
    • Garnish with chopped fresh parsley if desired.
    • Serve hot, either on its own, over pasta, or in a sandwich roll.
