Cooking chicken thighs in the Instant Pot is a quick and convenient way to enjoy a flavorful meal. The pressure cooking method ensures the chicken is juicy and tender, making it perfect for busy weeknights.

Ingredients:

  • 4-6 bone-in or boneless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup chicken broth or water
  • 1 tablespoon soy sauce (optional)
  • Fresh herbs (parsley or thyme, for garnish)

Instructions:

1. Season the Chicken:

  • In a small bowl, mix together the garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper. Rub this seasoning mix all over the chicken thighs.

2. Sauté the Chicken:

  • Turn the Instant Pot to the sauté function and add the olive oil. Once hot, add the chicken thighs, skin-side down if using bone-in, and sear for about 3-4 minutes until browned. Flip and sear the other side for an additional 2-3 minutes. Remove the chicken from the pot and set aside.

3. Deglaze the Pot:

  • Pour in the chicken broth (and soy sauce, if using), scraping up any browned bits from the bottom of the pot. This will add flavor and prevent a burn warning.

4. Pressure Cook:

  • Return the chicken thighs to the pot, placing them in the broth. Close the lid, ensuring the vent is set to sealing. Set the Instant Pot to pressure cook on high for 10 minutes.

5. Natural Release:

  • Once the cooking time is complete, allow the pressure to naturally release for 5 minutes, then switch to quick release to let out any remaining steam.

6. Serve:

  • Carefully remove the chicken thighs from the pot and let them rest for a few minutes. You can thicken the sauce by setting the pot back to sauté and simmering for a few minutes if desired. Serve the chicken with the sauce poured over it and garnish with fresh herbs.
