Hungarian Mushroom Soup Recipe

Hungarian Mushroom Soup

This Hungarian Mushroom Soup is a comforting, creamy soup filled with earthy mushrooms and seasoned with paprika, dill, and a hint of tang from sour cream. It’s perfect for a cozy meal, served with crusty bread.

Ingredients:

  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 1 lb mushrooms (cremini, button, or a mix), sliced
  • 3 cloves garlic, minced
  • 2 teaspoons Hungarian paprika (or regular paprika)
  • 1 tablespoon dried dill weed
  • 2 tablespoons all-purpose flour
  • 2 cups vegetable broth (or chicken broth)
  • 1 cup whole milk
  • 1 cup sour cream
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons lemon juice
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

1. Sauté the Vegetables:

  • In a large pot, melt the butter over medium heat.
  • Add the chopped onion and cook until soft and translucent, about 5 minutes.
  • Add the sliced mushrooms and cook for 7-8 minutes until the mushrooms release their moisture and start to brown.
  • Stir in the minced garlic and cook for another 1 minute.

2. Add Seasonings and Flour:

  • Sprinkle the paprika, dill weed, and flour over the mushroom mixture. Stir well to combine.
  • Cook for 1-2 minutes to cook off the raw flour taste.

3. Make the Soup:

  • Slowly pour in the vegetable broth while stirring to avoid lumps.
  • Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the soup to thicken.

4. Add Milk and Sour Cream:

  • Lower the heat and stir in the milk and soy sauce (or tamari). Simmer for another 5 minutes.
  • Whisk the sour cream into the soup until smooth and fully incorporated.

5. Final Touches:

  • Stir in the lemon juice to add brightness.
  • Season the soup with salt and black pepper to taste.

6. Serve:

  • Ladle the soup into bowls and garnish with fresh parsley, if desired.
  • Serve warm with crusty bread or crackers.

Tips:

  • For a richer soup: Use heavy cream instead of milk for a creamier texture.
  • Customize the mushrooms: You can use a mix of wild mushrooms like shiitake or oyster for more depth of flavor.
  • Add some heat: For a spicy kick, add a pinch of cayenne pepper or hot paprika.

This Hungarian Mushroom Soup is hearty and flavorful, perfect for a cold day or when you need a little comfort food!
