Hummus Soup Recipe
Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
2 tablespoons tahini
2 cloves garlic, minced
4 cups vegetable broth
1 tablespoon olive oil
1 small onion, diced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon smoked paprika
Juice of 1 lemon
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Optional toppings: crumbled feta cheese, toasted pine nuts, a drizzle of olive oil
Instructions:
Prepare the Chickpeas:
In a blender or food processor, combine the chickpeas, tahini, garlic, and lemon juice. Blend until smooth and set aside.
Cook the Aromatics:
In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until it becomes soft and translucent, about 5 minutes.
Add the Spices:
Stir in the cumin, coriander, and smoked paprika. Cook for another minute until the spices are fragrant.
Combine and Simmer:
Add the blended chickpea mixture to the pot. Pour in the vegetable broth and stir to combine. Bring the soup to a boil, then reduce the heat and let it simmer for about 15-20 minutes.
Season and Blend:
Use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, you can blend half the soup and leave the rest as is. Season with salt and pepper to taste.
Serve:
Ladle the soup into bowls. Garnish with fresh parsley, and if desired, add toppings like crumbled feta cheese, toasted pine nuts, or a drizzle of olive oil.
