Ingredients:

  • 1 pound (450g) shrimp, peeled and deveined (fresh or frozen)
  • 1/4 cup honey
  • 2 tablespoons lime juice (freshly squeezed is best)
  • 1 tablespoon lime zest
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)
  • Lime wedges, for serving

Instructions:

1. Prepare the Marinade:

  • In a bowl, whisk together the honey, lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and pepper.

2. Marinate the Shrimp:

  • Add the shrimp to the marinade and toss to coat. Allow the shrimp to marinate for about 15-30 minutes in the refrigerator.

3. Cook the Shrimp:

  • Heat a large skillet over medium-high heat. Add a little olive oil if needed.
  • Once hot, add the marinated shrimp (reserve the marinade) to the skillet in a single layer.
  • Cook for about 2-3 minutes on one side until they turn pink and start to caramelize, then flip and cook for another 1-2 minutes until cooked through.

4. Add the Marinade:

  • Pour the reserved marinade into the skillet. Cook for an additional 1-2 minutes, stirring frequently, until the sauce thickens slightly.

5. Serve:

  • Remove from heat and garnish with fresh cilantro if desired.
  • Serve immediately with lime wedges on the side.
