1. Prepare the Marinade:
- In a bowl, whisk together the honey, lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and pepper.

- Heat a large skillet over medium-high heat. Add a little olive oil if needed.
- Once hot, add the marinated shrimp (reserve the marinade) to the skillet in a single layer.
- Cook for about 2-3 minutes on one side until they turn pink and start to caramelize, then flip and cook for another 1-2 minutes until cooked through.
4. Add the Marinade:
- Pour the reserved marinade into the skillet. Cook for an additional 1-2 minutes, stirring frequently, until the sauce thickens slightly.
5. Serve:
- Remove from heat and garnish with fresh cilantro if desired.
- Serve immediately with lime wedges on the side.
Tips:
- Serving Suggestions: Pair the shrimp with jasmine rice, quinoa, or toss them in tacos with fresh veggies and avocado.
- Adjust Sweetness: If you prefer a less sweet dish, reduce the amount of honey or add a pinch of chili flakes for a spicy kick.
- Storage: Store any leftovers in an airtight container in the refrigerator for up to 2 days.
