    • Optional: 1 can (15 oz) beans (like cannellini or chickpeas), rinsed and drained

Instructions:

1. Sauté the Aromatics:

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté for about 2-3 minutes until the onion becomes translucent.

2. Add Vegetables:

  • Stir in the diced carrots, celery, and bell pepper. Cook for another 5 minutes until the vegetables begin to soften.

3. Combine Remaining Ingredients:

  • Add the zucchini, green beans, spinach (or kale), diced tomatoes (with juice), vegetable broth, thyme, basil, and bay leaf. Stir to combine.

4. Simmer:
