Ingredients:

1 lb (450g) ground turkey

1 tablespoon olive oil

1 small onion, chopped

2–3 bell peppers (any color), sliced into strips

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder (optional)

Salt and pepper, to taste

2 tablespoons soy sauce or coconut aminos (optional for extra flavor)

Fresh cilantro or parsley, for garnish (optional)
Instructions:

Sauté the aromatics:
Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 3–4 minutes. Add garlic and cook 1 more minute. -
Brown the turkey:
Add ground turkey to the skillet. Break it up with a spatula and cook until no longer pink, about 5–7 minutes. -
Add spices and peppers:
Stir in cumin, paprika, chili powder, salt, and pepper. Add bell pepper strips and cook until tender-crisp, about 5–6 more minutes. -
Finish and serve:
Stir in soy sauce or coconut aminos if using, adjust seasoning to taste, and cook another minute.
Garnish with fresh herbs if desired.
