Ground Turkey and Peppers is a quick, wholesome dish that’s full of color and bold flavor. It’s perfect on its own, served over rice or quinoa, wrapped in tortillas, or as a low-carb meal in lettuce cups. Packed with lean protein and veggies, it’s both satisfying and versatile.

Ingredients:

  • 1 lb (450g) ground turkey

  • 1 tablespoon olive oil

  • 1 small onion, chopped

  • 2–3 bell peppers (any color), sliced into strips

  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • ½ teaspoon chili powder (optional)

  • Salt and pepper, to taste

  • 2 tablespoons soy sauce or coconut aminos (optional for extra flavor)

  • Fresh cilantro or parsley, for garnish (optional)

Instructions:

  1. Sauté the aromatics:
    Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 3–4 minutes. Add garlic and cook 1 more minute.

  2. Brown the turkey:
    Add ground turkey to the skillet. Break it up with a spatula and cook until no longer pink, about 5–7 minutes.

  3. Add spices and peppers:
    Stir in cumin, paprika, chili powder, salt, and pepper. Add bell pepper strips and cook until tender-crisp, about 5–6 more minutes.

  4. Finish and serve:
    Stir in soy sauce or coconut aminos if using, adjust seasoning to taste, and cook another minute.
    Garnish with fresh herbs if desired.
