Greek Tomato Feta Soup Recipe

Greek Tomato Feta Soup

This Greek Tomato Feta Soup is a vibrant and flavorful dish, perfect for a cozy meal. It combines the rich taste of roasted tomatoes with the tanginess of feta cheese, creating a delightful Mediterranean-inspired soup that is both healthy and satisfying.

Ingredients:

  • 2 pounds ripe tomatoes (or 2 cans of whole peeled tomatoes)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups vegetable or chicken broth
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste
  • Fresh basil or parsley, for garnish
  • Juice of 1 lemon (optional)

Instructions:

1. Roast the Tomatoes:

  • Preheat the oven to 400°F (200°C). If using fresh tomatoes, slice them in half and place them cut side up on a baking sheet. Drizzle with olive oil and season with salt, pepper, and oregano. Roast for about 30-40 minutes until they are softened and caramelized.

2. Sauté the Aromatics:

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5-7 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.

3. Combine Ingredients:

  • If using canned tomatoes, add them (with their juice) to the pot. If using roasted tomatoes, add them along with any juices from the baking sheet. Stir to combine.

4. Add Broth:

  • Pour in the broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes. If you prefer a smoother texture, you can blend the soup at this stage using an immersion blender or by transferring it to a regular blender in batches.

5. Add Feta and Season:

  • Stir in the crumbled feta cheese and let it melt slightly. Add the lemon juice, if using, and adjust the seasoning with salt, pepper, and red pepper flakes to taste.

6. Serve:

  • Ladle the soup into bowls and garnish with fresh basil or parsley. Serve hot with crusty bread for dipping.

Tips:

  • Make It Creamy: For a creamier soup, add a splash of heavy cream or Greek yogurt when serving.
  • Add Protein: Consider adding cooked chickpeas or shredded chicken for extra protein.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop.

Enjoy your delicious and comforting Greek Tomato Feta Soup!
