Ingredients:

For the Salmon:

  • 2 salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

For the Salad:

  • 4 cups mixed salad greens (such as spinach, arugula, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1 bell pepper (red, yellow, or green), diced

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (optional)
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Salmon:
    • Preheat your grill or grill pan over medium-high heat.
    • In a small bowl, mix olive oil, lemon juice, oregano, salt, and pepper. Brush this mixture over both sides of the salmon fillets.
    • Grill the salmon for about 4-5 minutes per side, or until it flakes easily with a fork. Remove from heat and let it cool slightly.
  2. Make the Dressing:
    • In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, honey (if using), minced garlic, oregano, salt, and pepper. Adjust seasoning to taste.
  3. Assemble the Salad:
    • In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, Kalamata olives, bell pepper, and feta cheese.
    • Flake the grilled salmon into bite-sized pieces and add it to the salad.
  4. Dress the Salad:
    • Drizzle the dressing over the salad and toss gently to combine.
  5. Serve:
    • Serve the Greek salmon salad immediately, garnished with additional feta or olives if desired.

Tips:

  • You can substitute grilled chicken or shrimp for the salmon if you prefer.
  • This salad is great for meal prep; just keep the dressing separate until you’re ready to eat.
  • Add other veggies like artichoke hearts or avocado for more flavor and nutrition.

Enjoy your fresh and tasty Greek Salmon Salad!
