Easy, Spicy Roasted Potatoes

Here’s a classic recipe for roasted potatoes that are crispy on the outside and tender on the inside:

Ingredients:

  • 2 pounds potatoes (Yukon Gold or red potatoes work well)

  • 2-3 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried thyme or rosemary

  • Salt and pepper to taste

  • Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prepare the potatoes: Wash and dry the potatoes. If using larger potatoes, cut them into bite-sized pieces.

  3. Season the potatoes: In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, dried thyme or rosemary, salt, and pepper until evenly coated.

  4. Arrange on baking sheet: Spread the seasoned potatoes in a single layer on the prepared baking sheet.

  5. Roast: Bake in the preheated oven for 25-35 minutes, or until the potatoes are golden brown and crispy on the outside, and tender on the inside. Stir the potatoes halfway through the cooking time for even roasting.
