Easy Quinoa Salad Recipe:

Ingredients:

  • 1 cup quinoa

  • 2 cups water or vegetable broth

  • 1 red bell pepper, diced

  • 1/4 red onion, finely chopped

  • 1/4 cup fresh parsley, chopped

Instructions:

  1. Cook Quinoa: Rinse the quinoa under cold water to remove any bitterness. In a medium saucepan, combine the quinoa and water (or vegetable broth). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool.

  2. Prepare Vegetables: While the quinoa is cooling, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber and red bell pepper, finely chop the red onion, parsley, and mint.
