Ingredients:

  • 2 cups mashed potatoes (about 4 medium potatoes)
  • 1 ½ cups all-purpose flour
  • 1 egg

Instructions:

  1. Prepare Potatoes: Cook the potatoes (boil or bake until tender), then peel and mash them until smooth. Allow the mashed potatoes to cool slightly.
  2. Make Dough: In a bowl, combine the mashed potatoes, flour, egg, and a pinch of salt. Mix until a dough forms. You might need to add a little more flour if the dough is too sticky.
  3. Form Gnocchi: On a floured surface, roll the dough into a long, thin log. Cut the log into bite-sized pieces. Optionally, use a fork to press each piece lightly to create the traditional gnocchi indentations.
  4. Cook Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
  5. Serve: Toss the gnocchi with your favorite sauce or simply sauté them in butter with some herbs.
