Delicious Shrimp Fried Rice

Shrimp Fried Rice is a popular dish that combines shrimp with rice and various vegetables, all stir-fried together with seasonings and sauces. Here’s a basic recipe for making Shrimp Fried Rice:

Ingredients:

  • 1 lb (450g) shrimp, peeled and deveined
  • 4 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions:

  1. Prepare the Ingredients:
    • Ensure the rice is cooked and cooled (day-old rice works best).
    • Peel and devein the shrimp if not already done.
  2. Cook the Shrimp:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. Sauté Vegetables:
    • In the same skillet, add the remaining 1 tablespoon of oil.
    • Add the diced onion and cook until softened, about 2 minutes.
    • Add the minced garlic and mixed vegetables, and cook for another 3-4 minutes.
  4. Scramble the Eggs:
    • Push the vegetables to one side of the skillet.
    • Pour the beaten eggs into the other side and scramble until fully cooked.
  5. Combine and Stir-Fry:
    • Add the cooked rice to the skillet and mix everything together.
    • Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir well to coat the rice evenly.
    • Add the cooked shrimp back to the skillet and mix well.
    • Season with salt and pepper to taste.
  6. Garnish and Serve:
    • Garnish with chopped green onions.
