Ingredients
- 2 large sweet onions (Vidalia or yellow), sliced into thin rings or “chips”
- 1 cup grated Parmesan cheese (freshly grated for best results)
- 1 cup panko breadcrumbs (or regular breadcrumbs)
- ½ cup all-purpose flour (or gluten-free alternative)
- 2 large eggs (beaten, or 1 cup buttermilk as substitute)
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp black pepper
- ½ tsp cayenne pepper (optional, for spice)
- Cooking spray or light oil mist
Instructions
- Prep Onions – Slice onions into thin rings or half-moon chips. Separate layers and pat dry with a paper towel.
- Set Up Dredging Station –Bowl 1: flour + paprika + garlic powder + pepper.Bowl 2: beaten eggs (or buttermilk).Bowl 3: Parmesan + breadcrumbs (panko preferred).
- Coat Onions – Dip onion slices first into flour (shake off excess), then egg wash, and finally coat well with Parmesan-breadcrumb mixture.
- Rest Coated Onions – Place coated onions on a plate or rack for 5 minutes to let coating adhere.
- Bake or Air Fry –Oven: Preheat to 425°F (220°C). Arrange onions on a wire rack set over a baking sheet. Lightly mist with cooking spray. Bake 15–18 minutes, flipping halfway, until golden and crisp.Air Fryer: Preheat to 375°F (190°C). Place onions in a single layer in the basket. Cook 10–12 minutes, flipping halfway, until crispy and golden.
- Serve Immediately – Enjoy hot with dipping sauces like ranch, marinara, or chipotle aioli.
Notes
- For a low-carb version, replace breadcrumbs with almond flour and extra Parmesan.
- For a gluten-free version, use gluten-free panko or finely crushed pork rinds.
- Always use freshly grated Parmesan for best crisping results.
