Ingredients:

  • 1 lb (500g) potato gnocchi (store-bought or homemade)
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup chicken or vegetable broth
  • 1 cup Parmesan cheese, grated
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup mozzarella cheese, shredded (for topping)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook the Gnocchi:
    • Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually until they float to the top (about 2-3 minutes).
    • Drain and set aside.

    • Add the cooked gnocchi to the creamy sauce, gently stirring to coat.
  6. Bake the Dish:
    • Sprinkle the mozzarella cheese evenly over the top of the gnocchi and sauce.
    • Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
