Creamy Cucumber Salad Recipe

Creamy Cucumber Salad is a refreshing and versatile side dish that’s perfect for any occasion. It features crisp, thinly sliced cucumbers tossed in a tangy and creamy dressing made from sour cream or Greek yogurt. Enhanced with fresh dill and a touch of garlic, this salad is both light and satisfying. It’s a great way to enjoy cucumbers, especially during the warmer months, and pairs wonderfully with grilled meats, sandwiches, or just as a cool snack on its own.

Here’s a recipe for a refreshing Creamy Cucumber Salad:

Ingredients:

  • 2 large cucumbers
  • 1 cup sour cream or Greek yogurt
  • 2 tablespoons mayonnaise (optional for extra creaminess)
  • 1 tablespoon lemon juice or white vinegar
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • 1 tablespoon finely chopped red onion (optional)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions:

  1. Prepare the Cucumbers:
    • Peel the cucumbers if desired (the skin can be left on for extra crunch).
    • Slice the cucumbers thinly, about 1/4 inch thick. You can use a mandoline for even slices.
  2. Salt the Cucumbers:
    • Place the cucumber slices in a colander and sprinkle with a little salt.
    • Let them sit for about 10 minutes to draw out excess moisture.
    • After 10 minutes, gently pat the cucumbers dry with paper towels to remove excess water.
  3. Make the Dressing:
    • In a large bowl, combine the sour cream or Greek yogurt, mayonnaise (if using), lemon juice or vinegar, fresh dill, minced garlic, salt, and black pepper.
    • Mix well until all the ingredients are combined.
  4. Combine and Chill:
    • Add the cucumber slices to the bowl with the dressing and gently toss to coat the cucumbers evenly.
    • If you’re using red onion, add it to the salad and mix well.
    • Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
  5. Serve:
    • Before serving, give the salad a quick stir.
    • Garnish with chopped fresh parsley if desired.

Enjoy your creamy cucumber salad! It’s perfect as a side dish or a light, refreshing snack.
