  • 2 bay leaves

  • Salt and pepper to taste
  • Optional: 1-2 tablespoons olive oil

Instructions:

  1. Prep the Beans: Sort through the beans to remove any debris. Rinse them thoroughly. To reduce cooking time, soak the beans overnight in cold water, or use the quick-soak method by boiling them for 2 minutes, then letting them sit, covered, for 1 hour.
  2. Cook the Beans: Drain and rinse the soaked beans. In a large pot, combine the beans and 8 cups of water. Bring to a boil, then reduce the heat and simmer for about 1 hour, or until the beans are tender.
  3. Sauté Vegetables: In a separate pan, heat the olive oil (if using) over medium heat. Add the chopped onion, garlic, celery, and carrots. Cook until the vegetables are softened, about 5-7 minutes.
