Chocolate Zucchini Cake Recipe

Chocolate Zucchini Cake is a moist and delicious dessert that incorporates grated zucchini into a rich chocolate cake batter. The zucchini adds moisture and a tender texture to the cake without imparting a strong vegetable flavor, making it a great way to enjoy vegetables in a dessert form. The cake is typically made with ingredients such as flour, cocoa powder, baking soda, baking powder, sugar, eggs, oil or butter, vanilla extract, and of course, grated zucchini. Some recipes also include chocolate chips or nuts for added texture and flavor.

Here’s a simple recipe for Chocolate Zucchini Cake:

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 cup chocolate chips (optional)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a large bowl, beat together the granulated sugar, brown sugar, and vegetable oil until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the grated zucchini until evenly distributed in the batter. If using, fold in the chocolate chips and nuts.
  6. Pour the batter into the prepared baking pan and spread it out evenly.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Allow the cake to cool completely in the pan on a wire rack before slicing and serving.

Enjoy your Chocolate Zucchini Cake with a dusting of powdered sugar or a dollop of whipped cream!
