Chicken with Mustard Mascarpone Marsala Sauce

Here’s a recipe for Chicken with Mustard Mascarpone Marsala Sauce, a rich and creamy dish with a blend of tangy mustard, smooth mascarpone, and the depth of Marsala wine. It’s a flavorful twist on classic chicken dishes!

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1/2 cup Marsala wine (dry or sweet, depending on your preference)
  • 1/2 cup chicken broth
  • 1/4 cup Dijon mustard
  • 1/2 cup mascarpone cheese
  • 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Optional: 1 teaspoon heavy cream for extra richness

Instructions:

1. Prepare the Chicken:

  • Season the chicken breasts on both sides with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 6-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
  • Remove the chicken from the skillet and set aside on a plate, covering with foil to keep warm.

2. Make the Mustard Mascarpone Marsala Sauce:

  • In the same skillet, reduce the heat to medium. Add the butter and allow it to melt.
  • Pour in the Marsala wine, scraping up any bits from the bottom of the skillet. Let the wine simmer for about 2 minutes to reduce slightly.
  • Add the chicken broth and Dijon mustard, stirring to combine.
  • Stir in the mascarpone cheese and thyme, cooking for another 3-4 minutes until the sauce is creamy and slightly thickened.
  • Taste and adjust seasoning with salt, pepper, or a little more mustard for tang if desired. For extra richness, you can add a teaspoon of heavy cream.

3. Combine the Chicken and Sauce:

  • Return the chicken breasts to the skillet, spooning the sauce over them. Let them simmer for another 2-3 minutes to reheat and coat the chicken in the sauce.

4. Serve:

  • Plate the chicken and spoon the mustard mascarpone Marsala sauce over the top.
  • Garnish with fresh parsley and serve with your favorite side dishes, such as mashed potatoes, rice, or sautéed vegetables.

Enjoy your creamy, flavorful Chicken with Mustard Mascarpone Marsala Sauce!
