Chicken Patties (Easy Chicken Cakes)

Ingredients:

  • 1 pound ground chicken
  • 1/4 cup breadcrumbs (or panko for extra crunch)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (any color)
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano (or any preferred herb)
  • Salt and pepper to taste
  • Olive oil (for frying)

Instructions:

  1. Combine Ingredients: In a large bowl, mix together the ground chicken, breadcrumbs, Parmesan cheese (if using), onion, bell pepper, egg, garlic, oregano, salt, and pepper. Mix until well combined but don’t overmix.
  2. Form Patties: Shape the mixture into patties about 1/2 inch thick. You should get around 6-8 patties depending on size.
  3. Cook:
    • Pan-Frying: Heat a bit of olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes per side, or until they’re golden brown and cooked through.
    • Baking: Preheat the oven to 375°F (190°C). Place the patties on a baking sheet lined with parchment paper and bake for 20-25 minutes, flipping halfway through, until they are cooked through and lightly browned.
  4. Serve: Enjoy the patties as is or in a sandwich, with a side salad, or as part of a larger meal.
