Chicken Marsala over white rice

Ingredients:

  • For the Chicken:
    • 4 boneless, skinless chicken breasts
    • Salt and pepper
    • 1/2 cup all-purpose flour
    • 2-3 tablespoons olive oil
    • 1/2 cup Marsala wine
    • 1/2 cup chicken broth
    • 1/2 cup heavy cream
    • 8 oz mushrooms, sliced

  • For the White Rice:
    • 1 cup white rice
    • 2 cups water or chicken broth
    • 1 tablespoon butter (optional)
    • Salt to taste

Instructions:

  1. Prepare the Rice:
    • Rinse the rice under cold water until the water runs clear.
    • In a medium saucepan, bring water or chicken broth to a boil.
    • Add rice and a pinch of salt. Stir, cover, and reduce the heat to low.
    • Cook for about 18-20 minutes or until the rice is tender and the liquid is absorbed.
    • Fluff with a fork and set aside, keeping it warm.
  2. Prepare the Chicken:
    • Season the chicken breasts with salt and pepper.
    • Dredge the chicken in flour, shaking off any excess.
    • In a large skillet, heat olive oil over medium-high heat.
    • Cook the chicken breasts until golden brown on both sides, about 4-5 minutes per side. Remove from the skillet and set aside.
  3. Make the Marsala Sauce:
    • In the same skillet, add the butter and mushrooms. Cook until the mushrooms are browned and softened.

    • Pour in the Marsala wine, scraping up any browned bits from the bottom of the skillet. Let it simmer for a few minutes until the wine is reduced by half.
    • Stir in the chicken broth and bring to a simmer.
    • Add the heavy cream and stir until the sauce is well combined and slightly thickened.
  4. Combine and Serve:
    • Return the chicken breasts to the skillet, spooning some of the sauce over the top. Let them simmer in the sauce for a few minutes until heated through.
    • Serve the chicken and Marsala sauce over a bed of white rice.
    • Garnish with freshly chopped parsley.
