Instructions:

  1. Prepare the Chicken:
    • Place each chicken breast between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound them to an even thickness (about 1/2 inch thick).
  2. Seasoning and Coating:
    • In a shallow bowl or dish, combine flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper (if using).
    • In another bowl, whisk together buttermilk and eggs until well combined.
  3. Dredge and Coat:
    • Heat vegetable oil in a large skillet over medium-high heat, enough to cover about 1/2 inch of the skillet.
    • Dredge each chicken breast in the seasoned flour mixture, then dip into the buttermilk-egg mixture, and again dredge in the flour mixture, pressing gently to adhere.
  4. Fry the Chicken:
