This Chicken Cordon Bleu Meatloaf brings all the flavors of the traditional dish—tender chicken, smoky ham, and melty Swiss cheese—into a moist, savory meatloaf. It’s a comforting, crowd-pleasing dinner that’s simple enough for a weeknight but elegant enough for guests.

Ingredients:

For the Meatloaf:

  • 2 lbs ground chicken

  • 1 cup breadcrumbs (panko or regular)

  • 2 eggs

  • ½ cup milk

  • 2 cloves garlic, minced

  • 1 tsp Dijon mustard

  • 1 tsp onion powder

  • ½ tsp salt

  • ½ tsp black pepper

Filling:

  • 6 oz sliced deli ham

  • 1 ½ cups shredded or sliced Swiss cheese

Topping (optional but tasty):

  • 2 tbsp Dijon mustard

  • 2 tbsp mayonnaise

  • ½ cup shredded Swiss cheese

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease.

  2. Make the meat mixture:
    In a large bowl, combine ground chicken, breadcrumbs, eggs, milk, garlic, mustard, onion powder, salt, and pepper. Mix just until combined.

  3. Assemble the meatloaf:

    • Press half of the meat mixture into the bottom of the loaf pan.

    • Layer with ham slices, then Swiss cheese.

    • Top with the remaining meat mixture and smooth the surface.

  4. Add the topping (optional):
    Mix Dijon mustard and mayo, then spread on top. Sprinkle with Swiss cheese.

  5. Bake for 45–55 minutes, or until internal temp reaches 165°F (74°C). If needed, broil the top for a golden finish in the last few minutes.

  6. Rest and serve:
    Let rest 5–10 minutes before slicing. Serve with roasted potatoes, steamed veggies, or a light salad.

  • Use smoked ham for deeper flavor.

  • Try mozzarella or provolone if you prefer milder cheese.

  • Make mini meatloaves in a muffin tin for faster cooking and portion control.
