Cheesy Corn Fritters are golden, crispy patties filled with sweet corn, sharp cheese, and a touch of spice. They’re quick to whip up and delicious with a dollop of sour cream or sweet chili sauce.
Ingredients (Makes about 10 fritters):
- 1 ½ cups corn kernels (fresh, canned, or frozen & thawed)
- ¾ cup shredded cheddar cheese (or mozzarella)
- ½ cup all-purpose flour
- 1 teaspoon baking powder
- 2 large eggs
- 2 tablespoons milk
- ¼ cup chopped green onions or chives
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: pinch of chili flakes or ¼ tsp smoked paprika
- Oil, for frying
Instructions:
- Mix the batter:
In a large bowl, combine corn, cheese, flour, baking powder, eggs, milk, green onions, salt, pepper, and spices. Stir until well combined. The mixture will be thick and slightly sticky. - Heat oil:
In a large skillet, heat a thin layer of oil over medium heat. - Cook the fritters:
Scoop heaping tablespoons of batter into the pan, flatten slightly with a spatula. Cook 2–3 minutes per side or until golden brown and cooked through. Avoid overcrowding the pan. - Drain and serve:
Place fritters on paper towels to drain excess oil. Serve warm with sour cream, sweet chili sauce, or your favorite dip.
