Cheesy Corn Fritters

Cheesy Corn Fritters are golden, crispy patties filled with sweet corn, sharp cheese, and a touch of spice. They’re quick to whip up and delicious with a dollop of sour cream or sweet chili sauce.

Ingredients (Makes about 10 fritters):

  • 1 ½ cups corn kernels (fresh, canned, or frozen & thawed)
  • ¾ cup shredded cheddar cheese (or mozzarella)
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 large eggs
  • 2 tablespoons milk
  • ¼ cup chopped green onions or chives
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: pinch of chili flakes or ¼ tsp smoked paprika
  • Oil, for frying

Instructions:

  1. Mix the batter:
    In a large bowl, combine corn, cheese, flour, baking powder, eggs, milk, green onions, salt, pepper, and spices. Stir until well combined. The mixture will be thick and slightly sticky.
  2. Heat oil:
    In a large skillet, heat a thin layer of oil over medium heat.
  3. Cook the fritters:
    Scoop heaping tablespoons of batter into the pan, flatten slightly with a spatula. Cook 2–3 minutes per side or until golden brown and cooked through. Avoid overcrowding the pan.
  4. Drain and serve:
    Place fritters on paper towels to drain excess oil. Serve warm with sour cream, sweet chili sauce, or your favorite dip.
