Cheddar Broccoli Potato Soup Recipe

This creamy cheddar broccoli potato soup is a comforting dish that’s packed with flavor and nutrients. It’s perfect for chilly days and can be enjoyed as a hearty meal or a side dish.

Ingredients:

  • 2 tablespoons butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups broccoli florets (fresh or frozen)
  • 2 medium potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 2 cups sharp cheddar cheese, grated
  • Salt and pepper to taste
  • 1/2 teaspoon onion powder (optional)
  • 1/2 teaspoon garlic powder (optional)
  • Fresh chives or parsley for garnish (optional)

Instructions:

  1. Sauté the Vegetables:
    • In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Add Broccoli and Potatoes:
    • Add the broccoli florets and diced potatoes to the pot. Stir to combine with the onions and garlic.
  3. Add Broth and Simmer:
    • Pour in the vegetable or chicken broth, bringing the mixture to a boil. Reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
  4. Blend the Soup:
    • Once the potatoes are tender, use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup or use a potato masher.
  5. Add Cream and Cheese:
    • Stir in the heavy cream and grated cheddar cheese. Continue to heat over low heat until the cheese is melted and the soup is heated through. Adjust the seasoning with salt and pepper, and add onion and garlic powder if desired.
  6. Serve:
    • Ladle the soup into bowls and garnish with fresh chives or parsley if desired. Serve with crusty bread or a side salad for a complete meal.

Tips:

  • Make it Vegan: Substitute the butter with olive oil, use vegetable broth, and replace heavy cream with coconut milk or a plant-based cream alternative. Use nutritional yeast for a cheesy flavor instead of cheddar.
  • Additions: Feel free to add cooked bacon bits, croutons, or extra vegetables like carrots or cauliflower for added texture and flavor.

Enjoy your comforting bowl of cheddar broccoli potato soup!
